Minecraft skins are actually made by the users - at least, most of them. Some users may have copyrighted their skins. You might also be in risk of being copyright striked by Minecraft. You’d better not to do it.
I’m assuming that any skin from any other game or popular franchises would be allowed in some cases, it generally just depends on the copyright policy within that game or company. In this case, if you were to create your own minecraft style of skins for your game, then yes it would be allowed as you own full copyright to the things you have created. If you are using something else from another user who doesn’t want it to be redistributed in any form, then it wouldn’t be allowed.
Copyright isn’t a verb. It’s a right that is inherited the moment you create something. It’s not a thing you choose to do.
All skins are protected by copyright, but the creator can choose to provide you with a very open license such as creative commons if they want you to be able to use it freely.
As @DMCPEPlays said, skins are indeed made by users. But as long as you don’t use them personally (on your avatar) or pretend to be the creator of them, they don’t have any reason to sue you, if its, indeed, only a showcase.
