How do people add backgrounds such as this to cutscene animations? im so confused

could be just teleporting the player character to another spot like a box with a background

Beams+ as @1kaelen1 (sorry for ping) pointed out teleporting players into a box/moving characters into the sky in animation and sometimes it could be copies of said characters to prevent weird behavior in replication.
