I have fiber optic internet through ethernet, meaning I should have as fast internet as realistically possible, however when im playing roblox, my ping consistently stays above 60-70, but can spike to 200s

Well it’s going to depend on how far you are away from the server itself, not just your connection speed. If you are in denver and connect to a server in Sydney, then you are going to get a lacky connection.
Additionally, any load on a server can cause a higher ping, so if the game isn’t overly optimised you can still get a high ping.

That does seem to be the case, this is from a server in Texas with a low amount of players
Is there any way I can choose what location servers I’m put in?
High ping is very prohibitive in certain games.
Not really a good way to get a specific server location, unless the game you are in has specifically coded for that to be an option.
Generally, hitting Play chooses a decent server, however if there aren’t any servers available then you can get non-ideal servers.
