I’m trying to attempt to achieve this sort of canyon and I’m quite new to blender, any ideas?
Here’s what I’m trying to build

I know I should start off with a cone but how can I smooth it down a bit and make it so it’s not as pointy but rather stubby?

Hello! I’m only a novice in blender, but what I think you could do is add loopcuts (you’ll need them later, they are really helpful and scuplting will be way easier with them), apply “Subdivision surface” to your cone mesh to make it look smoother and after that you can edit your mesh in “Sculpting” tab creating a shape that you need.

I would insert that example image into blender as a background, pick one of the hills as the reference and then insert a cone, and use loopcuts to roughly outline the shape. When you’re finished with the rough draft, add a subdivision surface modifier. Then duplicate it a couple times to get the finished product
