How could I go about making a bending/physics dummy

Hello, im making a VR game with @Identity_Person and I want to make a dummy like the dummy in the VR game Rec Room. Video: - YouTube, how would I go about making it?

Not very well versed in this stuff but you will definitely need to take advantage of skinning (bones). If you want a realistic simulation you would have to do some IK constraints magic on the bones here as well, alternatively you could have some impact animations play but that might not be good enough for VR.
