Try the Instance.Changed method. You can have a function fire when Color.Changed occurs.

Check for the property through Changed event. Better if you use Instance:GetPropertyChangedSignal("Color").

Usage:

Instance:GetPropertyChangedSignal("Color"):Connect(function()
    -- behavior for color changed
