If I load old backupversion of my game, DataStore also will restore to old version?

Hi!
Is it possible to restore the old backup of the game in such a way that all players also restore the old DataStore from there?
I tried to find such a topic, but I missed it, so it probably doesn’t exist, but to be sure, because maybe someone was also interested in this topic, so I decided to ask here.

I don’t believe so. DataStores save within your game as a whole and not as certain versions are published.
