NonReplicated/CSGDictionaryService have protected Instance members

Nothing should have a protected Name/ClassName. I should not have to use pcall to gather the children of the DataModel.

EDIT: Also Stats, CoreGui, and GuiRoot. GuiRoot should get a real class.
