If I joined a server with an older version (v1.2), what would happen to my data in v1.3?

It should be carried over cause not much should change! All data will stay
but what if you had a new item that’s only given out in new servers?
what would happen to that item if you were to join an old server which didnt have that item?

The item might corrupt or break something important.
