Whenever i make a combat game my go-to option is using linear velocity but most of time it looks bad so it kinda left me wondering what type of force is the best for knockback.
There are a lot of posts already about this topic that will help you out.
Search ‘knockback’ or ‘pushback’ up top and you’ll find good answers there.

What do you not like about linear velocity? I’m going to guess that it looks way too unnatural? (ie the force doesn’t slow down? looks tweened?)
If that’s the case, it’s because it maintains a constant velocity.
If you only want the initial force, try the property LinearAssemblyVelocity. If you’re knocking back a character, apply a force on the HumanoidRootPart’s LinearAssemblyVelocity.
