I’d like to update a game (the game has already been published), but I can’t do the update in one day. How should I save what I have changed without having to publish it before the big update is finished?

There are multiple ways to do it. The maybe not easiest but definitely safest way is to create another game and publish the same game onto the different (private) game. There you can then work and do whatever you want and no one can see it. Once you want to publish it to the real just take the private game with the update and publish it to the game that should get that big update.
This is definitely safe and easy to do.

I do updates right in 1 day. The best is instantly 1 day every a week for me because if you do it more than a day usually you would be less productive. It’s my opinion.

I usually make another place titled (game name) Development, where I work on updates before releasing them.
