The stereotypical one where you repeatedly do a task in order to level up and rebirth to level up faster and get to a higher maximum level following a miscellaneous topic? Not much to say really, this game type isn’t actually a bad idea. If you can make a really stunning map and brilliant effects and GUI with a.great theme and dynamic objectives it can come out nice, look at Bee Swarm Simulator, that game is absolutely awesome and still classifies as the stereotypical simulator!

The one where you simulate something (ideally fun) such as flying an aircraft or crashing a car with realistic physics. If so then I recommend making the game have as much detail (not realism) as possible with events which can occur yet bending reality a bit to make it more fun. For example, cars explode when they get hit too hard and they have their engine running, you can abuse this trait by making them explode really hard. Vehicles crumple upon impact, try to emulate that effect.
Suppose you were making a farming simulator, you got to water plants and stuff and customise your plot realistically (so follow something like Lumber Tycoon which uses lots of physics) whilst also putting in features such as fertiliser!
I think the first one, is the type of simulator 
A simulator, in my eyes, is a repeating process. You get better and better and you rebirth. You keep repeating until you are #1.
That is 100% not simulator… Its way different, you can check out steam games on how they make simulator games.
