What fields of 2D art are in highest demand atm? Concept art, ui design, logos? Let me know your opinions, looking to branch out! (hoping I worded this right)
I think 2D art is mostly in demand for game icons and UI design, concept art? i’m not too sure.

There is not necessarily a statistical way to determine what field of design on ROBLOX has the highest demand but, Logo designers and GFX Artists I would say are arguably some of the most requested fields of design that have quite a high demand. But with high demand comes a lot of competition, I myself do Logo Design, UI/UX Desing, Branding Design, and 2D Art and it takes a lot of time to become ‘good’ at doing any of these which means you must be willing to work for a low price or even free to get a client base to build up from. Although being good at one helps give you an early lead.
Returning to your question, Concept artist isn’t a very high in demand hence most games that aren’t lead by a well-funded team will not be interested in paying for concepts since they won’t be able to afford it on top of other developers.
Logo Design is in really high demand with a lot of new designers coming into it but many still lacking the design knowledge from lack of taking time to learn and get familiar with the principles and elements of designing a logo. But if you do go down this way and progressively produce better logos I know logo designers whose commissions are full two days maximum. Not saying this is how it always goes but doing it right works.
UI Design is also in high demand with the infinite production of simulators and many other games, although many new UI Designers will not be commissioned since a lot of them are just cartoony with rounded corners and stolen icons if you do go this route please take time to learn to produce your own icons and experiment with many styles because many games will never be the same style which is a need in this field.
VFX not really that major of a field not many people look or need it and it has a lot of competition for the small audience since it’s not that difficult to do.

UI design/game icons are probably the most in demand, but there’s also a lot of competition. If you go look on fiverr there are a lot of people offering these services for quite cheap. Specialising in something niche isn’t necessarily a bad thing if there is demand and fewer people are doing it.
