To download a version history of a game, it is quite simple, without restoring it.
To achieve this, simply paste this URL, and modify it with the following criteria:
https://assetdelivery.roblox.com/v1/asset/?id=1234567890&version=2
What you need to change:
The id property to your game ID
The Version property of the version history listing you want to download
You will be prompted in the end to download a .rbxm file, that you can open with Roblox Studio.

Today, i wanted to visit some older versions of my game, however there was an issue using the version history’s restore button would overwrite my game’s version which i did not want. infact i just wanted to download it, so i got to thinking and i found a way to do it.

You use the placeid instead of game id.
You know the version id (found in place/version history)
You own or you have edit permissions in that place.
