I’m a builder who gets ideas quickly, but struggles to make them work.
My tips are:

Look at different time eras.

Look at images of architectural buildings, and take what makes them unique into note.

Look for a specific theme, energy, or emotion you want your build to represent. What place comes to your mind when you think of it?

Look through images of different buildings, even if it’s random. Something might strike you as a fun build.
Now, onto some more tips.
Find references. Don’t copy them directly, but they can be helpful when thinking of something appealing to build, and give some inspiration.
Map out your build, and where everything will go, how it will be placed (doesn’t need to be drawn, just explained or mapped in a way that you can go back to and understand)
How to add more visual appeal
I try to stay away from striking colors. If you want something colorful, make sure the colors will be easy on the eyes.
If the build is realistic, I’d suggest more neutral and natural colors. Tans, browns, grays, whites, blacks, certain shades of yellow, and certain shades of red do well. Look through color palettes.
Add colors that compliment each other. Color theory is a large part of art, and building is art. It’s an easy concept to grasp, and there’s many articles on it to help you learn about it. A useful tool is the color wheel.
Details and Lighting
I’d suggest not using only a few blocks, but try to use other blacks to add more shaping, and details. Add new edges, use unions to add more depth and detail to any item.
Finally, adjust the light levels and and colors. Add slight fog, make the lighting lighter or darker. My favorite lighting settings are shadow map and future. I can explain in more detail if you don’t already know this.
These are my main tip, sorry if it’s long. Building takes a lot to learn, but this is what helped me a lot. I’ll be glad to give more tips, just ask what else you may need tips on.
