You would be better off watching tutorials on YouTube.
Like;
You could also watch specific low-poly tutorials, like trees;
From that you can grasp the concept and continue inputting your ideas to it and make whatever you want.

It explains most of the basic things about Blender, how to use it, etc. In fact, there is a whole series on this. It mostly talks about Blender in general however, so I will have some more links below. I recommend just searching up “Low Poly Modeling | ROBLOX”. Here are some more links:
