Can someone explain SurfaceAppearances to me?

Can someone explain how surfaceappearances work and how I can use them ingame?

SurfaceAppearances from my understanding are a greater way to texture meshes. If you insert one into a mesh it allows you to add color maps, roughnessmap, etc. Check out the Roblox Developer blog thingy
