A few hours and a headache later, I’ve realized that I was unable to get stock and quantity details for limiteds because it isn’t covered in the pages for either AvatarEditorService:GetItemDetails() or MarketplaceService:GetProductInfo().
Printing the table returns this in output:

I made a pull request regarding a lot of the inconsistencies on MarketplaceService:GetProductInfo. Fixes the inconsistencies with missing collectibles item details alongside a ton of other stuff because this section needed a lot of work.
