When it comes to developing as one person, specifically developing collaborative/team-based games, are there any strategies that people use in order to balance and adjust mechanics more accurately to how the game will be intended to be played? At the moment I am just balancing on how it I think it will feel.

I have a co-op obby style game which is developed solely by me. I do everything based on my own thoughts of how it can be played, and then I call up my friends to test it out. It definitely can work, you just need to think of the possibilities created by having more people.

You should recruit testers and assemble a quality assurance team
You’ll still be the only dev but you’ll have people who can give you feedback from the perspective of a regular player

I always use local servers for that, with two players. It helps give a feel for what the game will be like with many players and still allows you to test combat mechanics, lobby systems, etc.
