Hello, would any of you be able to possibly provide some useful points of how I could possibly improve my UI?
By the way, this is my first time actually using Illustrator and Photoshop to make a UI, the icons were also made my me mostly.

They look great!
I only have two criticisms.
Since you are using a round kind of style for the icons and the buttons on the right side, I suggest making the middle rectangle rounded.
I’d also soften the drop shadow too.

The shadow effect is really good. Although I dont know about the grey bottom type bar on the ui though.

Great work!
I’m assuming that this UI is going to be a very small part of the screen, so I suggest enlarging the plus buttons so that they are easier to click on. This is especially crucial with the mobile audience (if you are planning to release your game on that platform).
Notice how the plus button is the same size as the frame behind it. This ensures that this button can be pressed easily.
Other than that, very good job on the UI!

In the backround make it completely white, and round the edges.

A very simple, clean and well executed design! The colours are very vibrant and full of life. I also appreciate the small details, like the shadows formed by the icons & the faint lines, making the whole design stand out!

Really good design choice, you could even be hired by known game creators if they take interest in this work/design.
