I want to recreate the image found on the Wiki page for it,
but I can’t quite figure out how to create unequally-sized columns. Does anyone have an example model or know how to achieve this?

The wiki page is very unhelpful in my opinion, you need to use a UI size constraint to achieve columns of different sizes…
