Hi there!
Someone I work with has low vision eyesight, wherein having things with larger text and higher contrast is typically better for them to see it clearer. I was wondering - what settings can be changed in Studio itself in order to make it easier for them to see what they’re doing on both the actual Studio itself and script editor?

There’s not many things that can help with this, maybe get your friend to get glasses, but if you can’t / they can’t or they don’t want to, dark mode is the first step, then you can go in the files of roblox, and change the fonts there, you can change them with a more visible font to your choice.
As for the font size, I’m not sure you can change it.
like @EternalSerb said, i don’t believe there’s any way to change Studio’s font within settings or anything, but you can go in the files. as for the script editor, if they tweak the customization options in settings enough, they can definitely find something that works for them.
