As someone who specialized in creating knives for the murder genre at the height of its peak, here are a few pointers;

  • Pick a Theme
    This is a rather important one. Judging by the looks of the knife you produced as an example, it looks like you simply paint bucketed the Texture Map of the Mesh and recolored the handle. Clients are going to want knives that stand out and ooze detail in the small area that it provides.

  • Dont be afraid to try an idea and fail
    Some ideas are tough to confine to what you exactly want to create. The best example I can provide for this personally was when I attempted to create a Cheese Knife but was unable to get it to display properly on the mesh.

    Fact of the matter is some of your ideas will be limited to the mesh you’re working with, unless you’re knowing or willing to jump into a 3D Modeling program of your choice.

  • Draw inspiration from competitors, but dont outright copy them
    This is something that was previously quite prevelant in the retexturing community when it was much more active. While it’s perfectly fine to cite another users creation for inspiration, you never want to outright copy anothers idea, as your reputation will be impacted handily by this.

Hopefully this gives you some insight into creating textures for clients, specifically creating knives. It’s not as easy as it looks.
