Hello I’m Devcycle I have been searching Youtube for many low poly tutorials but I cannot seem to find a Roblox one I use blender 2.81 can somebody help with out with this or link a video. Thank you.
You cannot build “low-poly”. The word “low-poly” is an adjective you use to describe a digitally projected object that possesses a significantly low amount of polygons that are usually represented as triangles.
It does not have to be smooth.
Low-poly is VERY often mixed with “Cartoon” which is an actual style.

Should I use roblox studio with the material smooth plastic so I can start off?
You can use any material. Though Cartoon is mostly associated with smooth textures such as smooth plastic. If you were to build a Cartoon-ish thing, it is highly recommended to use smooth plastic. You may build Cartoon-ish buildings/objects in Roblox Studio though it has proven far more difficult. I suggest staying with Blender 2.81.
I cannot find any videos on how to make low poly with blender 2.81 for Roblox on YouTube
One does not simply “make” low-poly. If is lacks polygons, it can be classified and defined as “low-poly”. Therefore, this is largely influenced by opinion if the object is low-poly or not. You cannot find videos on making “low-poly” because you simply cannot “make” low-poly.

Low-poly is something that I have been practicing off and on for some time, and I hope some of the resources that I can give you can help better your understanding of it. You mentioned Blender which is an excellent computer software for making low-poly builds. Here is a video that I think could help you learn how to start off by making trees in the style.
If you are looking to go into terrain building I would highly recommended Atrazine’s Terrain Plugin as its the most easiest to use in my opinion and something i’ve been using in multiple projects for some time, here’s the download. If you need a tutorial on usage here’s one.
