You can. But you need create good UVmap for it, then create texture. basically 2-4 textures: ColorMap, Metallness, RoughnessMap, NormalMap.
UVmap is smth like this:

And texture (I use single bc tiny flower don’t need tons of textures. And i’m not very good at textures

can u explain to me on how i can make these uv maps? (ill google but its incase i wont understand/find anything)

Basically in blender or another Mesh Editor. In blender you should select mesh, and then select faces which you want to manipulate. Or use built-in tools in context menu with right mouse buton click.

im new with blender ㅤ ㅤ ㅤ ㅤ ㅤ ㅤ ㅤ ㅤ ㅤ ㅤ ㅤ ㅤ ㅤ ㅤ ㅤ ㅤ ㅤ ㅤ

i followed this tutorial: Blender 2.8 Automatic UV Mapping in 25 Seconds!!! (Smart UV Project) - YouTube
this is the result:

how am i supposed to know like which is glasses which is skin, etc

Basically smart mesh editing isn’t good 95% of time. So you should try other things. Like UVmap from look.

i got no idea what to do there

isnt there a easier way to color him?

nope. the only thing you can is split mesh into color parts. So blue body mesh part, black pants, etc. and then in roblox you need color them as you need
