I use the smooth feature to get rid of gaps and other edges, but the only downside is that is makes the sea level rise on the sand which gives it a weird look. Is there a way around this?

Im sure theres multiple ways to fix this. However what I do is, I sculpt the terrain first and leave a perfectly flat area for the water. Once the terrain is in a suitable position, paint the water onto the flat surface. That usually works for me most of the time.
You could also try enabling ‘ignoreWater’ in the terrain editor if you want to edit the terrain after placing water, but thats assuming your water level is… level.
Is there a way to fix these terrain lines/edges? Eroding seems to do the best but it does not have much effect.
That’s usually caused by the smoothing tool. I’d avoid using it and instead use a combination of add and subtract on very low strengths to manipulate the terrain.
