Basically as the title says.
I am wondering if there are any specific categories I should avoid making, like Pokemon maybe?
Same with Roblox game characters, would they be acceptable or will I be at risk of copyright claims from them as well?
Already have categories like ‘restaurant logos’ and whatnot, and have had no issue with them, but I don’t know if using TV show or film or game characters may put me at risk.

Not 100% sure, but Roblox is pretty shielded when it comes to patented images. As long as you’re not making real life money (commercial use), most companies won’t mind, that’s if they even find out about your game.
Again, don’t take my word for it, I’m not entirely confident I’m right.
If a company does decide to take action, they’re most likely going directly to Roblox, who are just going to either message you, remove the decal from the platform or worst case scenario, delete the game.
That’s my biggest fear though, having the game deleted due to a single/a few images is quite concerning.
Planning on hundreds of categories so the risk of losing an entire game based on only a few is worrying.
I know Pokemon games in the past have been removed from the platform, which makes me cautious to use their images but I am uncertain if it’d be an issue if it’s such a small aspect of the game as opposed to the main premise.
Unsure of any other brands that may also take issue, if anyone knows of ones I should avoid that’d be most helpful.

if you think it’s a problem, you should probably use recovery files or save your game every once in a while.
