I’ve noticed that when I create large terrain, from a part, often from cylindrical parts, I end up with a zig zag line across the terrain, that looks like a seam. Does anyone know why I get this, and how to prevent it?

Here are some pics.
The zig-zag can probably be traced back to how you’re generating it. You can use part to terrain or a quick script for that. As for that weird dip in terrain, welcome to roblox. The way roblox voxels work, that is a common sight. There is no fix to this.
