In my game, there are living ragdolls that walk around. Suddenly, for no reason, they’ve began gaining sudden angular velocity and flinging into space. This hasn’t happened ANYTIME before but now.

If you havnt already, you could disable collision on the arms and legs, and you could also try setting their weight to 0
All of their body parts beside the head is uncollidable.
I did some testing and found out that when the server is lagging (mostly when a bunch of ragdolls are loaded), they will start flinging.
Making the head uncollidable fixes the problem (sometimes), but now their head falls down into their torso. Any way to fix that?
Nevermind, changing all their body parts collision did not fix it.
Changing the PhysicsSteppingMethod to Adaptive does though, but then that makes all the ragdolls super laggy and they now all walk super slow.
How about setting some of their body parts with a high mass?

Not really, nothing consistent. I just somewhat fixed it by not making them hit the ground too hard. Also, try turning physics stepping to Fixed
