Notice that there is also an Edit Quality Level setting. This affects rendering while you’re editing your game in Studio. Quality Level only affects the game while you’re playing it in studio.
Change Edit Quality Level instead.

I’ve tested it myself and it looks like I can no longer adjust both Quality Level settings.
This is a bug.
Did you restart Studio right after doing this?

I seem to be experiencing this bug as well. For reference, I have a pretty strong computer (6 core 4.1 GHz + 16GB RAM) and I’m also experiencing this bug which (to me at least) solidifies that it’s an issue that came from the latest studio update. You might want to report this bug to ROBLOX.
Anyways, a solution I use is using a plugin, called Render Settings, that allows you to easily switch your render settings and allows you to see how the game looks throughout the various render settings. To use it, install it, restart studio, then hop on over to the plugins section, click the icon and turn all three to the setting of your choice.
Hope this solution works until ROBLOX can fix this bug.
