Is there any possible way to have scripted building destruction so that a building can be destroyed without having to rely on physics and so that the building falls the same way each time?
Hey, I would recommend you look into making that destruction in blender and making it into an animation and then importing it into Roblox. There are a lot of videos on how to import animations into Roblox on youtube. And a lot of good tutorials on how to make physics-based animations in blender.

and then I would guess you need to have scripts to trigger those animations. I have no idea how so I recommend going on scripting support
