In the past, and as of today, I have had many troubles with stud increments in building. I usually use the default (1 stud) and sometimes 0.5 studs, but what increments will make my builds not look like they are from 2009.
I have tried using smaller stud increments, but they never seem to work out, if anyone has any advice, please let me know!

I myself usually use a variety of parts and sizes. I use these sizes: 1, 0.5, 0.25 and very rarely 0.125. 2009 builds usually are just the basic block parts. To avoid this, I recommend you should use wedges, spheres and cylinders.
What I personally use is 0.05
I treat my Increments by 5, example 0.05, 0.10, 0.15 ect
and for half the size I do 0.03
