After some studio updates, dragging models are no longer smooth, and i expect to be able to smoothly drag them across the baseplate. Strangely I’m the only one with this problem. Anyone have any tips?

Try going to File > Beta Features and then looking for Dragger QoL Improvements and uncheck that beta feature. After that, restart your Roblox Studio and try moving that same vehicle around to see if the issue has been fixed.

This was related to my issue! Ended up being a plugin that was acting up with the beta enabled.
