As a beginner/intermediate modeler in blender, what are some guns that I can make that aren’t too hard and confusing to create? Something like a pistol or maybe a shotgun.

Double barrel shotgun possibly, but it really shouldn’t be about easy to model. You should always push yourself to be better.

Model something like the M79 thumper, it’s quite simple and easy to model, it’s also the first gun I modelled. Next, you can try modelling the Mossberg 500 which is also a really simple gun. Then you can maybe model the M16 rifle? It’s really your choice.

Start modeling at small scales with limited detail and work your way up, the way I model something is I break down the shape into multiple pieces and fit them together like you’re actually assembling the part. Use reference images and the such to get a good idea of what you want to make.
