Some tools I use for managing builds are F3X, Archimedes, and a few custom ones. @caonhat1 has a point, Blender is a great tool to use, tho there are other just as good mesh editing programs like Wings3D.
However, let me give you some advice from someone who has been doing this for over 10 years now.
You need to be smart with what details you make, there is a trade-off when it comes to the amount of detail you add to a game and the quality of the game. It goes like this, the more detail you put into a game, the higher the quality is to a point, but after that point, the time spent starts to eat into returns, as well as the fact that the higher the detail of an item, the more likely it is to affect performance so there is a balance.
It also matters how you use that detail in your game, you need to make sure your LOD (Level of Detail) is even throughout the playing field of your game, meaning that you shouldn’t have details concentrated on one area where players can go, but also you need to make sure that you aren’t putting too much detail where people can’t see them either. The better focus is on whether the detail added, adds to the gameplay or not, because while great visuals are one thing, they mean nothing if your game isn’t engaging.
